Ingredients
Bunch of fresh basil leaves
¼ cup grated Parmesan cheese
½ cup extra virgin olive oil
3 tbs pine nuts
3 chopped garlic cloves
You can also make this using coriander as an alternative to basil.
Instuctions
Whizz basil leaves in a blender then add some of the nuts and garlic.
Add some of the cheese then blend again whilst drizzling in some oil.
Repeat until all the ingredients have been whizzed to a smooth paste.
Keeps in the fridge for up to one week if covered in a jar with a tight fitting lid.
Use with pasta.
