Ingredients
1½ lb parsnips
3 tbsp oil
Instuctions
Peel or scrub the parsnips and cut into 5cm/2inch lengths.
Boil the parsnips in a little water until not quite done.
Heat the oven to 200C/400F/Gas 6. Heat the oil in a roasting tin and toss the parsnips in the hot oil.
Roast the parsnips for 30-40 minutes until crisp and golden, basting half way through the cooking time.
Sprinkle with chopped flat leaf parsley and black pepper before serving.
Serves: 6
