Lentil & Apricot Soup

Ingredients
30 ml olive oil
2 onions, chopped
3 cloves garlic, chopped
30g dried apricots
200g red lentils
750ml chicken stock
2 plum tomatoes - peeled, seeded and chopped
large pinch ground cumin
sprig thyme
sea salt to taste
ground black pepper to taste
20ml fresh lemon juice

 

Instuctions
Saute onion, garlic, and apricots in olive oil.
Add lentils and stock.
Bring to a boil, then reduce heat and simmer 30 minutes.
Stir in tomatoes, and season with cumin, thyme, and salt and pepper to taste.
Simmer for 10 minutes.
Stir in lemon juice.
Puree if required.
Serves 4.
