Ingredients
25g butter
3 tsp oil
1 onion, finely chopped
450g fresh potato wedges
1 small red chilli, de-seeded and sliced
2 tsp ground coriander
1 tsp cumin seeds
1 tsp turmeric
Water
fresh coriander, to serve
Instuctions
Melt the butter and 1 tsp oil in a large pan.
Add the onion and cook over a medium heat until soft but not coloured.
Add chilli, ground coriander, cumin and turmeric.
Add potato wedges, toss well and fry in 1 tsp oil for 2 minutes.
Add a splash of water and salt.
Put in the oven for 10 minutes 180°C / gas mark 4.
Take out, fry in 1 tsp oil and make sure all the water has evaporated.
Pour into serving dish, scatter with fresh coriander and serve.
