When I was a wee boy I lived with my grandmother for a short while in her small cottage on the east coast of Scotland. Being a Londoner I had never encountered Stovies before but this is how I believe she made them…
3lbs potatoes
One large onion
2 carrots
1lb left over meat from Sunday
2oz dripping
½ pint stock
Seasoning
Instuctions
Chop the onions and dice the carrots, place in a pan with the dripping. Fry lightly for a few minutes until soft. Dice the meat and add to pan stirring a few times. Peel and dice the potatoes then add them to the pot together with the stock. Stir and bring to the boil then simmer for 30 minutes or so with the lid on. Shake and/or stir now again. When cooked serve on a platter sprinkled with chopped fresh parsley.
