Ingredients
Large onion
Fennel bulb
Two garlic cloves
Olive oil
100g brown rice
250ml vegetable stock
125g broad beans
Bunch flat leaf parsley
Instuctions
Chop onion, fennel and garlic and saute in the oil.
Add a little stock then stir in the rice. Gradually add the remaining stock and cook until rice is tender.
Stir in the broad beans and chopped parsely.
Serves: 2
