Ingredients
1 onion, chopped
1 leek, sliced
1 clove of garlic, finely chopped
tbsp fresh sage
2 large potatoes
3/4 pt. vegetable stock
butter
2 oz hard goats cheese
2 mushroom burgers or any veggie sausage or burger
salt and black pepper to season

 

Instuctions
Butter a large ovenproof dish. Slice the whole potatoes into rounds about the width of £1 coin. Lay potatoes in dish and sprinkle fresh sage over. Fry the garlic, onions and leeks gently in the butter until soft. Arrange over the potatoes, season lightly with salt and pepper, and add the stock. Cook at 180 for 1/1/2 hrs (until potatoes are soft). Basting occassionally
Chop the vegeburger/sausage and goats cheese into small pieces, arrange on the top and cook for a further 15 minutes.
